Sour - Other
Hops have played an important role in the craft beer world since the beginning of the scene’s renaissance. How the hop has expressed itself has varied and evolved ever since. Admittedly, in the world of sour mixed fermentations, the hop is an understated bit player compared to many other starring role styles, however the uses continue to evolve. Known for its bitter qualities and its inherent preservative nature, many other vital contributions go unnoticed. In the world of sour beers, dry hopping is the reference standard of uses. Playing up the aroma and flavour of the hop, while minimizing the bitterness is key to a pleasurable experience when combined with acidity. One of our favourite hop varietals that resonates with us and never disappoints is Hallertau Blanc. With a white wine character, and confusingly fruity AND floral notes, it offers a complex nose and flavour that is typically achieved through hop combinations. While grown in the Hallertau region, it is a far cry from its noble namesake. In actuality, this hop is a close relative of the Cascade varietal from North America, albeit with a distinctly German terroir. Unlike all of our other blends which improve wonderfully in cellar, this blend is intended to be enjoyed fresh. We hope you enjoy our first dry hopped release.
Sour - Fruited
‘brunch.’ – (you read that correctly, both lowercase and punctuated) is a Canadian take on a more traditional style: the framboise sour. Undeniably raspberry, but with a competing glow of Brettanomyces funk consistent with our blends. It is worth noting how the baseline acidity that is a product of microbial activity, conspires with the acids naturally present in the raspberries, to further increase the total acidity of the blend while maintaining a less aggressive and more balanced overall profile. In addition to the heavy raspberry charge, is a mostly silent, yet substantial fruit contribution of mango added not for its impact to the flavour profile, but for its contribution to the overall mouthfeel. At 7.6% ABV, this blend is a fermentation with no indication on the palate of the percentage contained within. Allow to warm slightly to enjoy all of the nuance and complexity. Enjoy! An Equatorial Detour was blended with the express intent of raising the humidity in any room. A mixed fermentation blend showcasing a playful series of handoffs between the tart, medium acidity our blends are known for, a firm funk background, and the expressive nature of fruit only the tropics can produce. Our house blend of microbes help create the crisp layers underpinning the bold, vibrant nose, and characteristic mixed fermentation dryness, presenting contrary to what our minds expect when we think of fruit. There are many fruited beers on the market today, we consider this blend to be the Detour from conventional fruited ales.

Our current blend focuses on the Montmorency Cherry. The pressure we placed upon ourselves with using cherries stems from our deeply held belief that cherries have a special traditional significance in the history of fruited beers. We view cherries as entirely separate from the pack when it comes to fruit. Whether long-aged, traditional method Kriek Lambics, or the truly special seasonal releases from the time-tested sour breweries of Oregon, cherries add another layer of magic to even the best sour beers. Utilizing our pale sour base beer as a canvas, we opted for a rather restrained (for us) amount of cherries in order to highlight the deep, jammy pie filling textureand flavour depth of the cherries, but thinning and brightening these flavours with the lactic acid forward nature of the underlying base blend. Although the wait was long, we are excited to bring you our take on what we consider to be a very special style.
Sour - Fruited
The American Southwest is an amazing place. With an arid climate and vast landscapes, it is generally considered to be a challenging environment for cultivation. However, as Jeff Goldblum so famously observed, “nature somehow finds a way.” Among the arroyos and high deserts, is a defiant hero: Opuntia, the Prickly Pear Cactus. Despite the outward appearance of this marvel of vegetation, it is amazingly thoroughly edible. Even the cactus blades (nopales) are amazing, especially when used in tacos. The ubiquity and importance of this rare survivor is noteworthy. Mexico even pays tribute to this special plant on its flag. Our focus today is on the fruit that it produces. These small, purplish, and bulbous cactus byproducts are packed with a sweet desert nectar that is a perfect companion to mixed fermentation blends. If you haven’t purchased your ticket to Santa Fe based on the description, you most definitely will after sampling. You will never be the same when you return!
Wild Ale - Other
A Saison Apparent! This blend has received the thorough Brettanomyces treatment. The Saison style originated near the border of Southern Belgium and Northern France as a farmhouse style beer with a low ABV% to serve the workers in the fields. Today, Saisons have evolved to be quite versatile in style, and substantially less sessionable. With the signature fruit esters and dry, hyper-attenuated finishing gravity from the diastaticus variant of the primary yeasts, it pours a rich copper to orange. The pairing of Saison with Brett is a hand-in-glove mating of dry, complex fruit with the earthy funk and deep flavours only a matured wild beer can achieve. Despite a tendency of wild yeasts to completely consume the resultant flavour profile of the primary yeast strains, we feel this blend achieves the balance of wild while preserving the traditional Saison character. We focused on an explicit lack of subtlety with this beer. Brettanomyces is undoubtedly the star of the show with esters playing the supporting role to round it out. As is our broader intention with all of our blends, we strive to showcase the fermentation characteristics above all else.
Grape Ale - Other
When it comes to fruit additions in sour beer, there are many combinations and experimentations that work well. Alternatively, there is this beer infusing a mixed fermentation blend with the blood of a Roman god. Enter the Sangiovese Grape, also colloquially known as the Blood of Jupiter. This hybrid release brings a dimension to the blend that only this thin-skinned, mildly tannic little fruit can provide. Making up traditionally ~70% of all Chianti blends, it provides a vinous reductive value to an already complex equation. With a presentation of red currant, pleasant spicy notes, with a far-off hint of tobacco leaf, the resultant flavour is far from the individuality of the inputs. Saluti!

We’ve waited a long time and cultivated an elaborate mixture of wild yeast and lactic acid bacteria over a period of years to bring you this blend. Presented with light copper hues and a citrus nose, the first impression of upfront lactic sourness soon gives way to a retronasal grapefruit olfaction that delights. To offer a balance to the acidity, a distinctive, delicately layered Brettanomyces character provides a baseline funk and backbone to the blend, providing even more depth to explore. We wanted to showcase our blend to be the difference, not the similarity. While there are many qualities that make this beer a textbook American Sour & Wild Mixed Fermentation by style, there are yet more characteristics that separate it from the pack. Against all odds, above the 49th Parallel North grows a hearty, spiny, sour bush. Despite the amazingly harsh conditions of its environment, defiant, glowing orange orbs of acid break through and flourish. You may have never heard of Sea Buckthorn, but chances are you have encountered it in your everyday life. These little globes of joy are the most acidic fruit we’ve ever encountered. Primarily scooped up entirely by the cosmetics industry for their high Omega 3-6-9 fatty acid contents, we had to search far and wide for our sour orange friends. This batch of Sea Buckthorn is of Siberian provenance, and with enough acidity to make facial motor function cease. We had a relatively difficult time with the solubility of this blend. We hadn’t accounted for the high fatty acid content of the fruit making it completely insoluble in solution. After some time on fruit, we ended up with half of the tank with teeth-meltingly sour liquid, and the other half of the tank with only the base beer blend. Suffice to say, after much work, we solved our solubility issues, but this release owns the title of the most stubborn blend we’ve made to date. However, the citrus-like fruit quality, combined with our blend selection makes all the memories of the production pains melt away. Enjoy!

The pineapple is one of the most elbow-throwing fruits in the world when it comes to assertive flavours and acidity. It doesn’t wait in line, ask for directions, or care what you think. In fact, pineapples are kind of assholes. If you’ve ever experienced the joys of carving one up, you understand even better. Our challenge with this blend was to crush the spirit of the pineapple in order to have it behave like a decent member of fruit society. Balance was the goal of this blend. Fruiting rates are not one size-fits-all, so an understanding of the target pineapple profile was key for us. Despite the general constitution of the pineapple it does have many great qualities. The flavour comes from the chemical compound Ethyl Butyrate, which is a commonly occurring ester in nature. Bright like the sun, it’s best enjoyed in pleasurable doses, as over indulging burns. We feel the intensity and level we achieved in this blend is on the mark. In the end, we made a new friend in pineapple.

Separated To A Degree – Summer 2021 is the third turn of our award winning mixed fermentation blend. We’ve blended this release with the same elaborate mixture of wild yeast and lactic acid bacteria with the goal of preserving the flavour profile above all else. Presented with light copper hues and a citrus nose, the first impression of upfront lactic sourness soon gives way to a retronasal grapefruit olfaction that delights. To offer a balance to the acidity, a distinctive, delicately layered Brettanomyces character provides a baseline funk and backbone to the blend, providing even more depth to explore. We wanted to showcase our blend to be the difference, not the similarity. While there are many qualities that make this beer a textbook American Sour & Wild Mixed Fermentation by style, there are yet more characteristics that separate it from the pack. We hope that this is the first of many of our blends you come to enjoy in the future.
Wild Ale - Other
Robert got canned, and we are pleased to introduce this blend as its less formal, more fun, little brother Bob. Ironically, this was the original name derived from the acronym for Blood Orange Brett before we added some formality to it for gravitas. Now we've decided to revert back to its colloquial common name for this delicious blend and release it in cans as BOB. A very drinkable summer beer, but with enough curious funk and depth to be enjoyed on the coldest of winter days. We find the interplay between our Brett cultures and blood orange difficult to define a cutoff between the flavours. Of all the citrus fruits in the realm of possibility, blood orange is definitely the most “wild” among them. This lack of a rigid structure and flavour disambiguation speaks to the inherent pairing abilities of our Brett cultures’ earthiness and the citric tang native to blood orange. Of note is that this is a wild blend, not sour, which highlights the wild funk creating properties of our cultures, while maintaining a slight fruit derived tartness and beer structure. Enjoy!

Looks can be deceiving, and our new blend is the perfect example. The Dragonfruit is one of nature’s most beautiful edible offerings. Pink and green with pineapple like folds and turns, it protects the purple-red or stark white interior flesh of this delicate fruit. The flavour contained within could best be described as timid, but still bold. In our pale sour base, we needed to make sure that these subtle fruit flavours came through. In order to do so, we needed to increase our fruiting rate with this particular fruit. One might think that means a little more than normal. Not at all. We added so much Dragonfruit to this blend that we needed two tanks to fruit it. Like 50% more fruit than our highest fruited blend. This release holds the Trial & Ale record for “most fruit ever” and we could not be happier with the results. A winelike profile, with almost no tannin extraction left us very pleased. A flirtatious Brettanomyces linger brings the taste home. This blend benefits from a serving temp slightly lower than cellar temps. We look forward to how this continues to develop over time.
Brett Beer
Very rarely do we name a beer in such a direct way, we generally prefer references to descriptors. Over the long process of developing all of our blends from brew to barrel to bottle to label, we generally “discover” the names of our blends when we refer to them throughout the entirety of the blend production through internal references made, tasting notes, anecdotes, etc. In every step of the development of this wild blend, “Blood Orange Brett” was eventually shortened to “Bob,” which inevitably had some formality added back to it to become “Robert.” We find the interplay between our Brett cultures and blood orange difficult to define a cutoff between the flavours. Our meticulous adherence to ridiculous hyperrationality sometimes requires a forced counterbalance. 18th Century neo-romantic era Germanic literature references seem like a fitting escape from the confines of rationality in the context of this contemporary period in North American history. Why not focus on an exploration of fervent individualism with a philosophical emotional slant, while assessing the inherent basis of good and evil? These ties seemed fitting when our inspiration for this blend comes from the mountainous alpine regions of Europe. The elderberry, while not a sweet berry, adds a depth and maturity to mixed fermentation blends unlike any other fruit. Anyone tasting an elderberry can attest to the irrational nature of the use of this fruit, because at undiluted concentrations, it is exceptionally unpalatable. However, when used in conjunction with our chosen blend, the romanticism can be found. We don’t know what irrational natural humanism tastes like, but this is what we imagine when we entertain the thought. These Elderberries journeyed from Austria to make their way to your glass. We recommend a cozy evening with Goethe while imbibing. Enjoy!

Farmhouse Ale - Saison
We’ve had blackberry on our minds for some time now, and from the very beginning of the planning stages for this blend, we knew that a Saison base was what we would use. Only the thin, hyper attenuated, dry, Brettanomyces canvas of our Saison cellar stock could properly highlight the rich fruit character extracted from the blackberries during maturation. The magic of the blackberry is found in its ability to put forth a heavy fruit profile, and unmistakably “berry” goodness, even after every bit of sugar is consumed by our microbes. Upon reflection, people generally do not disassociate fruit flavours from their normal sugar content. Which is why blending with fruit can be challenging. Trying to select fruit that will end up a reduced essence of the input, lacking the primary characteristic of sugar, is an interesting and fun exercise. Our goal with A Saison Brambled was to transport you to a creekside thicket near the end of a hot summer to indulge in the juicy berry flavours from the vines. Best enjoyed with both feet in a cold stream.

We are excited to introduce a new microbe to our blends: Welcome Pediococcus to the Trial & Ale family. Early on in our brewing plans, we dedicated a portion of our cellar space and barrels to barrel stock destined to be (very) long fermented. We filled these early and segregated them to wait until this traditional lactic acid producing bacteria went through the long process of creating a product that only time and Pedio can deliver. We are excited to find that our LAMF (Long-Aged Mixed Fermentation) barrels are starting to come online and are reaching maturity. We feel that these barrels, along with the slightly modified base recipe that includes a high amount of 6-year aged Lambic hops, produces a complex set of flavours that are a throwback to old world styles that can’t be achieved without a substantial amount of time in oak. One of our favourite aspects of these blends are the rich minerality akin to a pleasant slightly metallic note that produces a drying effect on the palate and leaves the taster desiring more.

Cellar balance is an important part of what we need to maintain to ensure a robust stock of barrels to choose from to provide consistency from blend to blend. Maintaining variety in our cellar balance allows us to be more creative, but it also affords us the opportunity to get lucky from time to time. Once in a while, during our barrel sampling sessions, we encounter a barrel with special tasting notes. In this special limited release, we took two barrels that displayed something special or interesting, and combined them and packaged them as is. These barrels had a number of fun things going on with the flavours they were presenting. We were satisfied with both individually, and even more happy when we combined them. In blending, it’s very rare that a barrel has enough complexity to be released on its own, hence the necessity of blending. These two barrels showcased a deep aroma and forward palate flavour, but then continued with a slightly acetic note, that adds complexity at the current quantities. You can taste many of our other blends in this release, but you will not find much of this release in many of our other blends.

To date, all of our sour blends have comprised our pale sour base beer, which we have an extensive history of working with. The logical next step in our evolution was to strive for the perfect dark sour base beer to begin experimenting with. Logically, we rang up our friends at Omen Brewing who happen to specialize in dark beer styles. We discussed the characteristics we were looking to work with and formulated a plan. Somewhere in the discussions of mixed culture bacterial fermentation, we had an interesting idea. What if we actually showcased the effect of mixed fermentation cultures on a traditional style? How would we demonstrate the non-saccharomyces contribution to the blend? We walked through all steps of the scientific method and talked through all conventionally accepted control and observe principles and settled on creating a first-hand look at the before and after. A new kind of collaboration was born. What excited us collectively about this collab was the opportunity to demonstrate the highest level of technical skill from both breweries. We decided on the Belgian Dark Strong (appellation respected) as our working base beer style. All wort was to be produced by Omen, and the batch split into two parts for fermenting. The Omen portion fermented into a clean Belgian Dark Strong; the Trial & Ale portion hauled back to the barrelhouse - destined for barrels to become something entirely different altogether.
Wild Ale - Other
Peaches don’t typically conjure visions of aggressive, wild flavours. Most people are likely to describe peaches as “soft” or “delicate” in their flavour profile. But we saw potential in bringing out a wild side of the peach and giving this fruit its day in the sun. Starting with our base Saison stock with its huge wild yeast character, we added a slightly tart component to further brighten up the blend, and allowed it to rest on peaches for several months. Rays of sunshine are the primary tasting notes, followed by a rush of all the unique musty cellar funk our signature wild Saison blending character is known for. A pleasant outcome to the blend is a melding of soft and wild, displaying a negotiated sensory middle ground. The peach rounds out and brings the wild character of the base to a more moderate level, while the funk helps elevate the peaches to achieve their full potential. As blenders, we are never more excited than when separate ingredients mutually enhance the other. While peaches on a wild beer base is not a particularly novel concept, we feel this example stands out as something really special. Come along and take a trip out to the farm with us. Enjoy!
Grape Ale - Other
The best day of the year for us always comes in autumn. It is the day when we receive the phone call that a large amount of wine grapes have arrived and are on their way to our door. Timed with the end of the grape harvest for wine producers, this annual shipment is destined for our mixed fermentation blends. The technical classification of this particular style is known as a Grape Ale, however it is more commonly known as a Beer/Wine Hybrid. Our first foray into this style was our fall 2020 release Up Around Mount Giove, which utilized the Sangiovese grape. We loved the character and charm in that release so much we decided to expand our grape repertoire and branch out into other varietals. We settled on the Zinfandel grape. The Zinfandel grape, also known as Primitivo, is picked opportunistically at a moment in time to maximize sugar content. These sweet little water balloons of sugary joy offer a deeper shade of purple, while bringing an all-around different flavour profile to the mix. As with all of our grape blends, we are very excited to see how they continue to evolve over time. Pick up this year’s Mount Giove release as well for a side-by-side comparison of the contribution the specific grape varietals bring to the blends. While we wish we were able to produce this style year-round, the seasonal release nature of these blends allows us to cherish them even more.
Sour - Other
We have to assume that not a lot of people want to sit down and make an entire meal out of nothing but lemons. They are typically a tertiary accompaniment that is there to provide acids to brighten up any dish or beverage. So why on earth would we design a blend completely around the flavours of the Sicilian lemon? In the gastro-chorus of flavour profiles, why would we give this fruit a solo? The truth is that lemons are frequently front and center in many culinary experiences but tend to keep a lower profile than they deserve. The shocking part of this release is the familiarity that comes through. You will likely recognize this flavour for what it is. How it plays with our house Brett cultures was even better than we had hoped. With an almost “spritzer” feel, it has the singular goal of achieving the pinnacle of refreshing, by design. While many beverages dance, this blend is unique because while it is dancing, it sings. Enjoy!

Sometimes genius comes via stupidity. If to err is human, then we are very human once in a while. The bottle in your hands is the physical embodiment of this. This batch was happily resting atop a glorious amount of pineapple with the intention of becoming a blend of 30,000 Steps. It was tasting fantastic, and nearing bottling day. Unfortunately (or very fortunately rather), the tank was adjacent to the tank destined for pomegranate. The inevitable occurred, and the pomegranate ended up in the pineapple fruiting tank. The names have been withheld to protect the guilty parties. After an initial panic, and discussion around what to do, we did what we do in every scenario - let it ride. Of all the combinations possible, pineapple and pomegranate are an extremely fortuitous mix up. The complementary flavours finish the other. The upfront pineapple character leads into the trailing pomegranate in a way that we could have never imagined. Enjoy our happy accident!

Red Ale - Irish
An archetypal Irish Red Ale, similar to the one that got my wife through her college years. We use classically British ingredients, such as Fuggle hops, light crystal malt, and roasted barley to create a balanced, refreshing, and good for any season beer. Light shines through the translucent dark-amber colour like stained glass. That quintessential almost-fruity “red” taste is quick off the palate, so you won’t be weighed down by a pint or two.
Brown Ale - American
Think you don't like brown ale? Try this one. The pale chocolate and Maris Otter malts make it chocolatey, but not overpowering. The sulphate-heavy water chemistry makes it smooth, creamy, and totally balanced. The Fuggle hops creates just a graceful hint of earthy bitterness and no lingering aftertaste. You've never had a brown ale more drinkable than the Born Ready.
IPA - Imperial / Double
This West-coaster isn’t made to challenge your ability to tolerate the intolerable. It’s just a delicious, complex beer made from cool ingredients. Want to add some substance to your dear old friend, the lager? We took a classic Czech lager recipe and upgraded the malt to the dark, roasty, toasty pale chocolate and black patent varieties. The medium-bodied mouthfeel is paired with a sweet caramelized taste and that familiar Saaz spice to manufacture a heavy-duty, yet highly drinkable brew. This is the end-of-day, feet-up, indulge-yourself beer you’ve been searching for.

Here's to our version of an Interlude in stout form. A beautiful medley of decadent milk chocolate and slight roast. An instrumental stripped down, simple beer.
IPA - American
We dressed it up in plaid and layered in nostalgic vibes of 90s Grunge using some classic and new hops. But really, this beer is about the malt. We used a brand-new malt from Gambrinus Malting called IPA Malt. The new IPA Malt is like a pilsner malt yet has more colour and flavour. It finishes dry as a West Coast should and we used Honey Malted Oats to add back a touch of body and sweetness to balance out the bitterness. Hops: Simcoe, El Dorado, Centennial, Citra
Sour - Fruited
The Fuzz Box: a device that deliberately saturates & distorts sound, giving off juicy tones to any guitar lick. ? Here at Poly, we like our sours balanced and to build as they are consumed. We used 100% real peach juice & puree, no extracts used here! Don't expect that fake peach aroma - it drinks more like eating a real peach. Tart yet juicyyyy.
Sour - Fruited Gose
This Octave was strung together with a balance of subtle flavours that are mere steps apart, intertwining their frequencies to produce notes of orange peel and coriander with a pinch of sea salt.
Wheat Beer - Fruited
We know what you’re thinking: “I could really go for a delicious and citrusy mimosa right now, but I also want a refreshing witbier.” Well have we got the solution for you! To add another layer, we blended real calamansi puree and concentrated orange juice together, giving it an elevated citrus flavour. We’re not saying this will pair perfectly with your next brunch date, but we’re also not NOT saying that either. So grab some friends, hit a patio and enjoy.

Like a racehorse, you're sure to "Burn the Breeze" to grab one of these bold pale ales. With strong citrus and pine flavours, this is well balanced by a warm bread and honey malt backbone.

Crafted for Wyrd Bier Adventure 2024, our entry is a Foreign/Export style off-dry stout with cinnamon bark, all spice, nutmeg, coriander, thyme, ginger, scotch bonnet peppers and salt. Warm, roasty, and spicy, each sip unlocks a taste of the Caribbean.

Red Ale - Other
For our first experiment in Raw Ales we brewed a Pacific Northwest style Red Ale that uses Munich and Crystal Malts for sweetness and deep red colour. Notes of caramel, toffee, and toast are prevalent, balanced with Simcoe, locally grown Hound Dog Hop Farms Cascade hops, and the fruity El Dorado variety. The result is a pleasant malty treat balanced with stone fruit, citrus, and piney aromas.
Schwarzbier
We dove back into traditional styles with another throwback lager. This Schwarzbier style beer is rich in coffee, toast, and caramel. All the roasted malt of a Porter combined with the refreshing drinkability of a Pilsner makes this a smooth companion for chilly nights. Prost!

Belgian Strong Dark Ale
This is the big mean sister to our B.S. Wit. Dark sweet figgy fruit, assertive banana, clove, and some bubblegum. Enjoy now or after cellaring... just not before driving.
IPA - Imperial / Double
This is it! Our very first Double IPA! We generally like our hoppy beers brewed to a bit more of a manageable strength, but when we tried a hop variety called Ariana in a batch of our “Swap the Hops NEPA”, we knew it was time. This IPA is 8.5% and packed with more hops than anything we've made before. It is much more.... Grande! AG was fermented with Kveik yeast, has big bold peach/mango/stone fruit notes and is balanced by just the right amount of bitterness.
IPA - Imperial / Double
Brewing that last Double IPA taught us that you really like these! So here’s the next one. We pulled out all the stops and hopped “TYN” with our favorite Australian staples; Galaxy and Nelson Sauvin. This can is packed with so many big fruity hop notes, we’re surprised you can’t smell it through the aluminum! Balanced with just the right amount of bitterness, this DIPA is very easy drinking for 8.5%, and will have you saying “Thank You, Next” as you make your way through the 4-pack. But actually, maybe don’t drink the whole 4-pack at once. That’s probably a bit much.
IPA - White / Wheat
A whiteout of Australian Hops! Galaxy and Ella hops to be exact. Brewed with a bevy of wheat malt and Belgian yeast, this white IPA will blanket your palate with a flurry of tropical, citrus, and pleasant bubblegum notes. Well-balanced bitterness, hazy; and finishing nice and dry!

English folklore references the Spring-Heeled Jack, a devil-like creature with eyes like “red balls of fire”! Our Spring-Heeled Jack Red IPA combines English yeast, malts and hops (Challenger) ...and a boatload of Galaxy, just because.

We see you frantically cruising around looking for gifts, last minute party favours, something to keep you from showing up at a holiday dinner empty handed… the liquor store is where we would look too. You’re our kind of person. Stocking Stuffer Gingerbread Brown Ale is brewed with ginger, molasses, and cinnamon - just like in Patricks Mom’s recipe! Really, he just got off the phone with her as we’re writing this blurb. This beer is a perfect sleigh ride slurper, carolling can, Santa snack substitution, and yes; STOCKING STUFFER! Just for grown-ups though… We hope you enjoy this beer in front of the fireplace channel and we wish you the happiest holiday season! IPA - Black / Cascadian Dark Ale
Some people would call this beer a Black IPA, but those people would be wrong. We don’t want to throw too much shade, but calling something a “BLACK India PALE Ale” just doesn’t make much sense, y’know? It’s an oxymoron or something. Cascadian Dark Ale is a beer style that was pioneered in the Pacific Northwest and weaves classic citrus, earth, and pine hop notes with a touch of roast, dark chocolate, and coffee. Now let's crack one open, shake off the semantics, and get back to being “glass half full” type folks.
Pale Ale - Belgian
Our lead brewer Patrick designed this recipe based on a Belgian classic that he enjoyed regularly abroad but isn’t available here. Affectionately referred to as “Wizzy D” at the brewery, this amber ale has a nice cozy toffee/toasty malt character with big fruit & spice notes. These tongue tickling banana and clove flavours come from esters produced by the Belgian yeast strain during fermentation. Pretty neat stuff! Wizard Device is a favorite during shoulder seasons and cool evenings by the campfire.
IPA - New England / Hazy
Three Hops This Time is a tasty criss-cross of three of our favourites! We piled an aggressive load of Citra, Idaho 7, and Galaxy into a fermentor while it was a-bubblin’ to bring a tasty dance party to your mouth. Big citrus and tropical flavours with a restrained bitterness make this IPA easy for anyone to sip along with. Crack a caaaan, tip it back now y'all, three hops this time… everybody clap your hands!
IPA - New England / Hazy
So many grams per litre!! Nothing but new school hopping techniques for that tropical stank and a restrained bitterness. Full-bodied, jungle fruit sweetness upfront, slightly resinous, green piney hop bitterness in the swallow. Hazy and mouth-filling, almost slick on the palate, yet finishing refreshingly dry!
Wheat Beer - Witbier / Blanche
A cloudy wheat beer with distinctive Belgian yeast character, citrus peel, and coriander spicing.
Stout - Other
This stout was engineered towards early trips to warm pubs on dark winter afternoons in Alberta. Lower alcohol and smooth malts make for easy drinking. Notes of dark fruit, lightly roasted coffee, and a pinch of smoke. It's dark out... but it's still early!
IPA - American
Did you know cannabis and hops are cousins?? Brewing ATO is an annual quest to combine new as well as classic hop varieties to create the most deliciously dank IPA we can! There isn’t actually any weed in here, but this year we did add terpenes along with a few litres of purposefully lightstruck hop tea to add a touch of skunkiness reminiscent of our second favourite green plant. Flavour: Like a pineapple that was dragged through a pine forest, but in a good way. Aroma: ...kinda smells like the art teacher's office.

Your fix of downers AND uppers! This is an amber ale cold steeped with TARIKU MENGESHA coffee beans from our pals at The Colombian Mountain Coffee & Roastery here in Edmonton, Alberta. If there was ever any doubt, we'd say the coffee makes this a legitimate morning beverage. Enjoy your First Pull!

Well hellooo summer time! We know what you're thinking. “A radler?? I dunno guys…”. Well let us invite you to climb down off of your craft beer high horse and join us in the kiddie pool! There Will Be Blood Orange is a perfect blend of Bent Stick beer and blood orange juice that has a low ABV and some vitamins to help keep you floatin’ through the afternoon. Grab your boonie hat and pop open that tube of sunscreen, we’ll do your back.
Pilsner - Other
We started our brewery to make the beers we want to drink, and Hay-Maker is the prime example! “Wheated Pilsner” is an SOB (style of beer) we totally just made up, but thought would be delicious. Hay-Maker is a finely balanced pilsner brewed with the choicest premium malts and conditioned by plenty of lagering time. We added Alberta wheat and modern hopping techniques to put a Bent Stick twist on a European classic.
Pale Ale - American
Swap the Hops is one of the beers we’ve brewed from the start, but has changed a bunch over time. It started as an American Style Pale Ale, morphed into a hazy New England, and now we’re back to a more classic Pale Ale recipe. Why? Because that’s what we’re thirsty for these days and we make the rules around here. Join us on this journey through nostrils and over tongue to try different single hop varieties (as indicated by the green lettering on the front) as we experiment with new flavours together! Learning is fun.

Having one of those days? Raise your hands to the heavens, look up and holler "SALINITY NOW!". It will help. But if it doesn't, this pale ale brewed with salt and fresh citrus might.
Porter - Baltic
You probably grabbed this beer thinking you were going to have a good time. WRONG. You’re about to learn stuff! In the 18th century the English were really into brewing beers that travelled well, as they were preoccupied with not minding their own business. Strong dark beers gained popularity in surrounding regions, and eventually other folks started brewing versions themselves. It happens to be particularly chilly around the Baltic Sea, so lager yeast (which ferments at cooler temperatures than ale yeast), was used as it’s what works better when it’s nippy out. Next thing you know, you’ve got Baltic Porter, which is essentially a lagered version of a strong porter or imperial stout that wins national awards for a rinky-dink little brewery in Edmonton. It's also dark, like Space.

Amongst all the new school hazy NEIPA out there these days, west coast IPA seems to be a style frozen in time! We brewed a throwback IPA packed with Simcoe & Centennial hops for those classic earthy/pine/citrus notes. Wheeze the Juice!!
Spiced / Herbed Beer
Get ready to steep yourself in one of our summer favourites! Porch Swing (which won a silver at the Alberta Brewing Awards btw) is brewed with kveik yeast to coax tasty stone fruit flavours out of the fermentation. The yeast profile is a perfect backdrop for the dreamy Peach Dragon Fruit Rooibos tea from local tea wizard; The Tea Girl! It’s beery enough to still be beer, but balanced with enough fruity notes to be the perfect four-pack to split with a porch pal on a warm afternoon. Summer is precious in Edmonton, and we hope this beer helps you enjoy every sweet minute!
Farmhouse Ale - Saison
It was wicked cold this winter, so we brewed this pineapple saison dreaming of warmer places! We added fruit juice to the fermentation and got a nice dry saison with light pineapple notes. The name is a reference to the flight number between Edmonton & Hawaii. Beer is best enjoyed in an aloha shirt.

Porter - Other
In case you weren’t aware by now, we thoroughly enjoy getting funky in the brewery. This release is a prime example of that and is a wonderful representation of layering different flavours. To get the chai essence in this concoction we steeped our own blend of green cardamom, cinnamon, black peppercorn, ginger, and clove in the wort after the boil was over. The masala mixture with a complex (at least in our mind) malt combo brings together the best of both worlds in spice and beer. Full bodied yet easy to go down with a restrained alcohol level, this one has complementary notes of chai masala, toffee, and chocolate.
Sour - Fruited
We’re back again with another fruit overload. Using a fairly standard base recipe, we opted to use a combination of pink guava and red prickly pear purees. The pink guava dominates with a tart tropical fruit punch profile while the red prickly pear adds some earthiness and complexity in the background. Post-fermentation we dry hopped with an ample dose of Mosaic to provide some depth of character to the finished product. Pink, hazy, and tropical fruit forward, we think we checked all the hype boxes with this release.
Stout - Other
‘Tis the season to have something that will warm up your belly and keep you jolly. Our Mole Stout is the perfect winter beer that is nothing short of decadent and packs a punch. We start with a full stout base fermented with English Ale II to provide a fuller smooth body with a hint of dark stone fruit esters. The true magic happens post-fermentation with plenty of support characters featuring ancho chiles, cacao nibs, and cinnamon sticks. Expect rich notes upfront of chocolate, chile, and cinnamon with supporting plum, earthy, and roasty flavours.
Farmhouse Ale - Saison
Saison is one of the most underappreciated styles and we aim to change that stigma. The French Saison strain is well known for its dry finish with big pineapple esters and pepper phenols. To emphasize these notes, the natural thought is to incorporate the real thing. We turned our mind on autopilot and did just that. Autonomic Mind is our natural progression to spicing up a solid base saison with its natural counterparts. The pineapple hits hard, finishing dry and spicy, with a nuanced tingly numbness from the peppercorns.
Cream Ale
Where is the roast??? While dark beer season is right around the corner, we couldn’t think of a better way to ease everyone into it by releasing our coffee cream ale. Delicately balancing taste between a crushable crispy boi and a morning cup of joe. By “dry beaning” with whole coffee beans for a very short period, we were able to extract all the goodness without the green tannic bite. Expect roast, honey, and cream notes.

Staying on-brand with the ‘irrational’ mindset we are ecstatic to reveal the first core beer in our line-up. Sempiternal incorporates the perfect balance of Pilsner and Vienna malts accompanied by a complex layering of Saaz hops. Our Bohemian Pseudo-Pilsner stands apart from the rest by combining innovative brewing techniques alongside the distinctive profile that KRISPY brings to the table. Crisp, clean, and noble; complex yet simple in the best way possible.
Pale Ale - American
This pale ale is wonderfully balanced between malt, hop, and tea flavour. What a second… tea? Oh yeah buddy, we infused one of our favourite black tea blends from @BanffTeaCo into this beer. Our interpretation pays homage to the OG of craft beer with our own personal twist. Expect dark berry, floral, and pine notes with a solid malty backbone.
IPA - Black / Cascadian Dark Ale
Our Cascadian Dark Ale uses an old-school combination of Chinook, Centennial, and Simcoe hops in a conscious effort to pay homage to the Republic of Cascadia. The malt profile provides enough body, toast, and sweetness to add balance without outshining the hop character. Expect pine, resin, biscuit, stone fruit, citrus, mild chocolate, and slight spicy notes.
Stout - Other
Designed with intent to ease us all into the changing of the seasons, Shoulder Season is a hybrid style between an American Brown Ale and American Stout. We took our stout base recipe and scaled everything back to obtain a lighter malt character and flavour profile. This balanced malt bill allows for moderate flavours of coffee, dark chocolate, and nutty notes.
IPA - Rye
Big, bold, and unrelenting, this Rye IPA does not hold back. Look for a clean fermentation profile, light malt backbone, and an aggressive bombardment of hops. The hop profile was chosen specially to accentuate the rye malt with notes of grapefruit, pine, and fresh cut wood.
Sour - Traditional Gose
With the everchanging beer scene, gose (GOES-UH) is quickly becoming a crowd favourite. Kettle soured with our in-house harvested souring culture, provides a unique mosaic to the acidity. The key to dialing in the perfect gose is balancing the saltiness with the acidic bite. Lime zest and coriander seed are the supporting players rounding out the flavour profile. Expect sour, salty, and citrus notes.
Farmhouse Ale - Saison
The time has come to welcome the first beer brewed in our space! Saison is a broad style and can bring all sorts of complexity to the table. For our first iteration, we decided to keep our sanity somewhat in check and brew something balanced that really shows off the yeast character. The yeast fermented the wort bone dry leaving behind an estery and phenolic masterpiece. The malt and hops are here to play a supporting role giving the yeast room to shine. Expect dry, spice, and citrus notes.
Sour - Other
For this creation, we decided to showcase how hops and sours can live in harmony. This one will challenge your mind to how we can extract so much juicy fruit flavour without the use of any fruit additions. Don’t expect any subtly here with robust notes of passion fruit, nectarine, and just a dash of mouth puckering goodness.

Pale Ale - American
Where do we draw the line? While style guidelines are designed to point brewers in the right direction, we believe they are nothing more than that; guidelines, not rules. Nothing new would ever come about without breaking the status quo and experimenting! While an XPA is somewhere blurred between the lines of a Pale Ale and IPA we decided to add another dimension by fermenting this one bone dry with an amylase enzyme. Our Brut XPA showcases an extremely light malt backbone with a balanced hop character. A dry profile with orange and stone fruit notes are displayed here.
IPA - New England / Hazy
It looks like New England IPAs are here to stay and we are stoked about this one. Featuring our favourite experiment hop HBC-586 alongside the classic Citra, expect overwhelming notes of lychee, mango, and citrus. In true Irrational fashion, we also decided to switch up our yeast from Hydra to Foggy London this time around to experiment with.
Lager - Japanese Rice
By frankensteining the most popular tea in Japan (sencha) and one of our favourite Japanese beer styles (Rice Lager) with a hint of dried mango, we had a challenge to balance all these delicate flavours. Expect rich mango, earthy, and herbal notes all backed by a crisp finish.
Farmhouse Ale - Grisette
Our modern interpretation on this classical style. We started a traditional malt bill and yeast strain but allowed our creativity to shine for the other ingredients in this beer. To increase depth and round out the flavour profile, we used a new world hop heavy hitter Cashmere and a hefty cold side addition of coconut flakes to bring out the subtle tropical notes. Expect light notes of Melon, coconut, and fruit salad.
IPA - Imperial / Double New England / Hazy
If we didn’t brew some type of hazy for our birthday celebration we were certain the people would riot. But why stop at another New England, let's up that ABV and include some cryo hops into the equation. A thick and creamy malt bill with multiple layers of hop dosing over a plethora of varieties gives a deep tropical hop saturation. While the ABV is up there, we’ve managed to keep the alcohol heat down and the juicy hop character up. Expect nothing short of a juice bomb with citrus and tropical fruits.
Farmhouse Ale - Saison
This one has been a long time in the making! We decided to team up with our friends over at @LongroofBrewing for our first collaboration brew. The brewers decided on keeping this simple by brewing the same base wort and mix things up by pitching different strains of yeast. The idea was to compare how both process, place, and yeast can influence the end product. For Irrational Terroir, we brewed this at Irrational and pitched our go-to workhouse French Saison into this batch fermented on hot end resulting in an estery-phenolic masterpiece. Expect bold notes of pineapple and peppercorn in this one. Make sure to try both side-by-side to get the full terroir experience!

This one has been a long time in the making! We decided to team up with our friends over at @LongroofBrewing for our first collaboration brew. The brewers decided on keeping this simple by brewing the same base wort and mix things up by pitching different strains of yeast. The idea was to compare how process, place, and yeast can influence the end product. Longroof Terroir was brewed down at Longroof and pitched a new yeast blend Jötunn. This yeast is especially interesting because it is blend of a diastatic saison strain with a Kveik strain. Expect a soft mouthfeel with fruity and plantain notes. Make sure to try both side-by-side to get the full terroir experience!

This Hazy Pale Ale is a bold, hop forward ale. Clouded and Amber in colour and appearance. Medium bodied and rich in texture. Generous additions of bright, exotic hops that conjures a deluge of candy, tangerine, citrus and melon. Layered within grassy bitterness that recedes with each sip.
Lager - Pale
The Bossman was influenced by lager styles from Japan, Germany and the American prohibition. This medium bodied, copper lager is our original brew. It has a malt forward backbone that is accentuated by a crisp, dry finish.
Sour - Other
Pale, medium bodied and bursting with mysteriously, bright, equatorial character. Brilliant pineapple aromatics coupled with lime/citrus and sweet melon flavors. Finishes with fleeting bitterness and balanced acidity. *no fruit or flavorings added*
Cream Ale
We have cold fermented this ale and allowed it to condition to give it lager like qualities. We have also nitrofied this beer which gives it an incredibly smooth mouthfeel and cascading foam. One would almost say it's creamy. A truely unique beer drinking experience.

A cold conditioned, traditional Bavarian beer. Medium body and malt forward with notes of toast, biscuit, caramel and honey.
Fruit Beer
Designed with refreshment in mind. Crisp, light bodied lager brewed with Citra hops and Pink Himalayan Salt. A large infusion of Grapefruit gives this beer a distinctive citrus aroma and straw coloured appearance. Perfectly balanced for warm weather drinking.

Created in Collaboration with Roasti Coffee Co. This complex, nitrified beer presents as light to medium bodied, dark brown in colour and topped by a silky, ivory head that persists while evenly lacing your glass. Rich in flavour with prominent notes of dark chocolate, toffee and roasted coffee. Refreshingly balanced, it’s a perfect pick me up!
Belgian Dubbel
A complex and cold conditioned, traditional Trappist ale. It presents as deep copper with medium body and a decadent mouthfeel. Expect bread, brown sugar, dark fruit and banana with floral, honey aromatics and a warming, slightly dry finish.
Wheat Beer - American Pale Wheat

The second in the Trinity IPA series, using the Holy Trinity of hops Simcoe, Mosaic and Citra certainly wears a hubcap diamond star halo in all its holyness. This time we used Norwegian Kveik yeast to create a pleasantly assertive patio pleaser. Big sweet orange peel notes with just the right amount of bitterness to create a zen like balance. It's time to get it on, Bang a Gong.

We get it, some people love sours... some people hate them, but we can all agree on one thing: we Love Frank Turner! So we wanted to name a beer in his honor and what better way than paying our respects to his album “Love Ire & Song”. This dry hopped sour NEPA brings big aroma notes of fresh punchy guava and is bursting at the seams with citrus and pineapple flavors. Sensibly acidic for the sour fans and pleasantly juicy for the rookies!

Every batch will feature a new coffee from our friends @rogue_wave_coffee. This batch will be a Natural Ethiopian Nensibo Suke blend. A German-inspired ale that was lagered for 5 weeks, producing delicate citrus aromas and a crisp, clean finish. Carefully blended with a natural Ethiopian coffee to add a subtle stone fruit brightness. Here's to all the nights we should have had just a cuppa coffee

Sudden Draft is a well-balanced IPA that combines British malts and yeast with American hops. The aroma starts off with a touch of citrus but then turns into peaches. The hop bitter starts low then builds to a pinnacle, but always maintains a balance even in its big finish.
Pale Ale - Belgian
The Tumbling Goat is a biscuity Belgian Ale that has been hopped with fruity Azacca giving it notes of pineapple, mango, and melon which compliment the spicy clove and red fruit aromas that the Belgian yeast provide.
Bitter - Extra Special / Strong (ESB)
This is an average-strength English ale that balances the malt and hops. The ESB is a deep copper colour with good clarity and a low off-white head. The beer has medium bitterness with a moderately low caramelly malt sweetness and bready / biscuity complexity. Hop flavor is earthy, resiny, and floral from traditional UK hops that give this beer high drinkability.
Farmhouse Ale - Saison
Lost Flip Flop is the perfect patio beer. It is fermented with a traditional French Saison yeast, but that where the tradition ends. A healthy dose of Citra and Sorachi Ace hops gives this beer a strong citrus, lemony and tropical aroma. The aroma and flavour makes this a very refreshing beer on warm summer days.
Pilsner - Czech / Bohemian
This is a rich Czech Pilsner, with considerable malt and hop character and a long, rounded finish. This beer is golden and has a dense, long-lasting, creamy white head. The beer is complex yet well-balanced and refreshing. The malt flavors are complex for a Pilsner-type beer, and the bitterness is strong but clean and without harshness, which gives a rounded impression that enhances drinkability.
IPA - Imperial / Double
This juicy DIPA has notes of guava, grapefruit, pineapple and pine resin, balanced by caramel and light toffee. This is a great beer to sip on the patio in the sun.
Porter - American
Daly Jolt Porter has a complex malt profile of roasted barely, chocolate, brown, and smoked malts that work together to create depth and intrigue. This beer is also intentionally outside the style guidelines with a healthy dose of pine and citrus hops that further the beer’s complexity.
Farmhouse Ale - Saison
Our Accidental Beary Saison is a truly sensational easy-drinking beer. We plan to change up the berries in the Accidental Beary each season. The raspberry version is very rich with flavor / aroma with a beautiful pink colour. The beer still exhibit the traditional Saison yeast and citrus tones from the hops.
Lager - Munich Dunkel
This dark brown lager is rich with deep bready-toasty flavours with hints of nuts, roasty and chocolate. It finishes crisp and clean with a low spicy herbal hop tones.
Bock - Single / Traditional
Aromas of raisin compliment intense flavours of caramel and biscuit in this crisp, strong German-style lager. Best enjoyed with friends on a cold, fall day.
Sour - Fruited Gose
This is the Sun Smacked Gose with Haskaps. What is a haskap? It is a berry that tastes like a blueberry and a raspberry. It is tart, sweet and juicy which pairs really great the lemony tartness of the Gose. We get the haskaps locally from Bokey Blooms Farm. They are a u-pick farm north of St. Albert.
Blonde / Golden Ale - Other
This is Endeavour Brewing’s first mixed fermentation beer release. The base beer, a Belgian Blonde, was brewed in early February 2021 and has spent 9 months maturing in oak wine barrels where Brettanomyces yeast performed its magic. This combination results in a beer with wonderful stone fruit (nectarines, apricots) aromas. The low acidity makes this beer easy to drink and allows the citrus, light baking spices and oaky/wine notes to come through.

On the Hood is a traditional German Hefeweizen. The yeast provides On the Hood with a very distinctive banana and clove or even bubblegum flavour and aroma character. On the Hood pours hazy and is a golden straw colour with a thick moussy white head. The texture of wheat imparts the sensation of a fluffy, creamy fullness that progresses to a light, spritzy finish from the carbonation. On the Hood is beautifully effervescent making it perfect for summer days.

Our Vega West Coast IPA is dedicated to the aviation pioneer Wiley Post, who landed his Lockheed Vega on the field that was once outside of our brewery as part of his record breaking, eight-day round-the-world trip in 1931. It pours a sunset orange with bold citrus and pine on both the palate and aroma.
Kölsch
Our 1929 Kölsch pays homage to Canada's first licensed airfield., which is just outside our front door. It's a classic style that pours a beautiful straw-yellow colour, is light on the palate, and has a grainy, crisp finish.
Stout - Coffee
Brewed in collaboration with our local pals CRW Orient Coffee this stout is no shy guy! Bold roasty notes, reminiscent of its ancestor brew, and finished with highly aromatic, locally roasted Vietnamese Coffee. This beer is velvety smooth with some lactose added for sweetness.
Fruit Beer
This pillowy offering provides a smooth mouthfeel that is here to stay. Bursting with aromas of strawberry and with a slight sweetness to balance the tartness of this IPA, the strawberry flavours linger after each sip providing you with a sweet reminder of what the next sip will bring.
Porter - Other
Winter is here, it's time to toss those tarps back on! We wanted to bring you a Porter with rich, roasted malt character and subtle chocolate undertones, balanced by a unique combination of sweetness and fruity notes of raspberries. We've been longing for an escape from the long & dark Alberta winter, so we brewed this punchy pineapple delight to transport us to paradise. Heavy tropical notes in the aroma and flavour from the hops and a big blast of real pineapple. The combo makes this blonde ale incredibly drinkable, with a nice, dry, refreshing finish (take us awaaaay....) .
Farmhouse Ale - Saison
Hold on tight for the Wheels Up saison! This 7.0% malt-forward beer uses local Rahr and Red Shed grains and Simcoe, Chinook and Amarillo hops.

Featuring a big fruity and acidic punch of Prickly Pear, balanced with a touch of Mexican Cinnamon and Vanilla this beer will transport you to the streets of Mexico’s culinary capital, without nightmare that is air travel in 2022.

Brewed in collaboration with our friends just out our back door (and a quick turn south) DOSC. This tart pale ale was brewed to pair with their brunch menu, but goes down smooth any time of day. Orange zest in the whirlpool, a secondary fermentation on sauvignon blanc juice, and a healthy dry hop of galaxy and strata create a blast of citrus on the noise followed by fruity wine notes of passionfruit, peach and grapefruit typically found in your favourite bottle of sauvignon blanc.
Pilsner - Italian
Honouring the spirit of an Italian Pilsner, while adding a western Canadian twist. A crisp Pilsner base, late-hopped with Saphir hops provides a delightful floral aroma and flavour, with a dash of Canadian prairie wheat to round out the body! Birrifico, it’s Terrifico!

A play off of our favourite Aussie Pale Ale, Show Pony from our sister brewery in Calgary, Last Best. Using the same hops, but different techniques, we’ve taken Show Pony and turned it into a Hazy Miniature IPA (horse). Low in abv, but full in body and flavour with notes of peach and grapefruit, along with a touch of lemon and pine. This is a single batch one-off brew, so grab a pint before we have to sing Bye Bye. 3.1% ALC. / VOl.
Wheat Beer - Hefeweizen
A beer inspired by our own PB+J Pizza…and by cutting down on food waste. We took a classic Hefeweizen recipe, and got a little creative with it. Over the weekend before brew day, the kitchen team at Campio cooked up any leftover pizza dough into plain crusts. We then threw them into the Mash with the rest of the grain bill of this beer adding fermentable sugars as well as an extra character to the mouthfeel. We then added a healthy dose of pineapple and jalapeno for a secondary fermentation, bringing forward the flavours of both with just a touch of spice on the back end. While the debate rages on about pineapple on pizza, it has found a new perfect placement in this ester-y fruity, and light spicy take on a Hef.
IPA - Session
Brewed in collaboration with our friends down the QE2, Banded Peak Brewing. We’ve built the perfect beer to keep the session going all weekend (summer?) long! A combination of New Zealand hops bring notes of grape, white wine, grass and a hint of black pepper spice to this ultra refreshing IPA, with just enough bitterness to keep you reaching back for more.

Substantially Complete reflects The Monolith both as a physical entity and the beer it produces. This blend is a snapshot of our mixed fermentation program year to year, using Marsala, Red Wine and Cognac barrels of different vintages. After fermenting for 1, 2, & 3 years using a house-blend of microorganisms, the result is our quintessential blend— adventurous, yet balanced, with bright peach and citrus flavour, light oxidative and wine notes, highlighted by a medium acidity. It has floral and melon fruit aromatics, with clean malt, honey dew, and lychee flavours followed by a dry, lightly bitter finish.
Brown Ale - Other
This dark ale is deep brown in color, medium-bodied, with a combination of rich chocolate and subtle fruit notes. Dark chocolate blends into raisins, dried cherries, and red currants for a surprisingly dry finish.
Pale Ale - Other
A light, pale malt showcases this freshly dry-hopped ale. This ultimate version of ESM fisplays a robust tropical hop profile, amplified by a crisp, dry finish and surprisingly low bitterness.

This crisp clean lager has a bright gold colour with a heavy floral aroma of honeysuckle. The low bitterness lends itself to a honey like flavour with a crisp finish. Rob’s best friend from Germany, Fabian designed this beer and helped us install our brewhouse. You’re a legend brü.

This collaboration with our friends from Twin Sails Brewing started one fateful night in the town of Dunham. We were lodged together in a house on a hill, for Brasserie Dunham’s
Foudres Unis festival. After sharing a few beers, the plan for this collab was hatched! We departed from our usual base wort, opting to include Cara Aroma and Munich malts. After
fermenting for 16 months in Spanish red wine barrels the resulting blend has medium acidity, bright red fruit notes, light wine tannin, and a dry finish.
Lager - Pale
Light and easy-drinking, floral with a gentle hop character, and light in colour. This lager is made for the patio weather that we’re always promised.
Wheat Beer - Other
Whoops’ origins lie in an error made in a batch of Union Bhoys many years ago. Too much wheat was added and a new beer was created. We did an aggressive dry hop with German Tettnang to give Whoops a bright hop bite with a menthol twinge. Be amazed at our mistakes!
Sour - Other
This collab with our friends from Sea Change is the second of two beers we brewed together; both were produced using identical ingredients but different processes. This Mixed Fermentation blend was fermented in Italian Moscato Bianco
and Chianti barrels for 14 months using a special blend of yeasts and bacteria. The result is bright white wine fruitiness and red wine depth with intense citrus and floral hop character. It has round texture with high acidity, and a juicy finish.
Lager - Dark
Lager O’Darkness is our homage to the classic lighter dark beer. We put our lager twist on it and walk the line between easy drinkability and rich maltiness. It is black in color with high clarity, low bitterness, and notes of dark chocolate and toasty malt. Believe it or not, this is a great patio beer.
Lager - Dark
Brewed in honour of one of our assistant brewers, this smooth dark lager has chocolate wafer, cola, and dark cherry notes both in the aroma and flavour. It has a low bitterness and finishes very clean and dry.It deftly walks the line between satisfying sipper, and crushable lager.
Sour - Other
Ferry of the Damned is a Quick Turn mixed fermentation beer fermented in stainless steel tanks for 4 months. It was then re-fermented on Riesling Grape Pomace with the addition of a special blend of microorganisms for an additional 2 months. The time spent on the Riesling pomace adds subtle wine character with additional texture and complexity. The result is a unique beer with bright citrus and wine flavours, subtle nutty aromatics, and medium light acidity. - We hope you like it.

This beer was fermented using a house-blend of microorganisms in French oak barrels for one year. This batch has a medium-light acidity that showcases a balanced and bright stone fruit character.

Deb returns 5 years after being a staple in our launch lineup. Deb is a malty English-style ale with a sharp hop bite. Dry hopped with East Kent Goldings, Deb finishes very dry, crisp, and punctuated with orange marmalade and citrus notes. Deb is back and as delicious as ever!
Sour - Other
The Mimic is a Quick Turn Mixed Fermentation beer, fermented in stainless steel tanks for 4 months. Our use of the traditional Turbid Mashing process lends to full texture and flavour, while having a very low alcohol content. It is fermented with a special blend of Saccharomyces, Brettanomyces, Lactobacillus, and Pediococcus. This unique blend of organisms gives bright citrus and tropical fruit flavours and aromas, balanced by a round texture and medium acidity.
Lager - Pale
This is the lager version of mainstay Extra Special Monk ale. It combines the flavours of the ESM with the smoothness of a lager. It is a pale, hoppy lager with tropical aroma and flavours, low-medium bitterness, and a dry finish.
Sour - Other
Sojourn in Sicily is a Mixed Fermentation blend featuring unique characteristics imparted by Sicilian Marsala barrels. The beer fermented in the Marsala barrels for 20 months before being blended. This blend is the first led by our brewer Ian “Nar”
Nawrot who has been with the brewery since the start. The result is a robust beer with subtle red berry and rose water aromatics, savoury walnut and maple flavours, which are amplified by a medium high acidity. We hope you like it!

MIXED BARREL FERMENTATION
Mentis Oculi is the second release in the Dry Hop Series. This blend of one and a half year mixed-ferment barrels is a collision of two worlds. Old World Tettnang and New World Simcoe, two wildly different hops, blend delightfully to dry hop this beer. The result is honey floral, ripe papaya, and light menthol hop character balanced by a full, round texture and medium-light acidity. We hope you like it.

The Fruitful Pursuits Series is made in late summer when ripe fruit is in season and at peak quality. For 2019 Plum we used hundreds of kilograms of freshly harvested Damson and President Okanagan plums which stayed on this mixed-ferment blend for 2 months. The result is bright ruby-purple colour, very prominent plum character, and a medium-high acidity.
Wild Ale - Other
This collaboration with our friends from Brasserie Dieu Du Ciel! is a turbid mashed lager, fermented in Spanish red wine barrels then conditioned with Brettanomyces for 8 months. This process results in floral, honey character, with over ripe fruit and light Brettanomyces notes.
It picks up subtle wine fruitiness and tannin from thebarrels and finishes with a delicate tart acidity.

This New England style IPA gets is name from the most powerful left hook in the sport of Boxing, proudly owned by 8 x World Boxing Champion Jelena Mrdjenovich. Nothing says 'Pals' like sharing a sandwich and a cold one to wash it all down. In collaboration with head chef Brad at Pals Sandwiches, we brewed this Tiny IPA that packs a big punch—all that hoppy goodness you’d expect from an IPA, but with a low ABV, so you can smash a sandwich and crush a beer or two and always keep your cool.
Fresh pineapple, bright passionfruit, sauvignon blanc grapes, fresh squeezed oranges, soft citrus-forward wheat, approachable yet complex.
IPA - Other
A careful balance of Citra and Simcoe, and a heavy dose of an experimental Dry Hopping puts this in the Genus: IPA, but it remains an unknown species. So, we’re just gonna call it Gremlin.
Mixing the drinkability and body of a lager with the fruit-forward modern hop approach of a NEIPA, and juuust enough bitterness to keep it dry and crispy. It has elements of popular IPA styles but it’s very much it’s own unique thing. Resin-y, Piney, and Clear, like a West Coast IPA. Citrusy, and Fruit Forward like a good Hazy.

This Aussie-inspired XPA brings aromas of pineapple, mango, honey and chamomile which are met with a gentle-yet-zippy bitterness. This golden sparkling boy showcases a blend of Australian and American hops and the finest European summer barley. In this case, the Xtra stands for Xtra Smashability.
Belgian Tripel
If you were a Belgian Monk from the early 1900s, the tripel would be your lawn-scything beer of choice. We teamed up with Blindman brewing, makers of some of the best Belgian style brews in the province, to pay homage to this complex yet humble beer. Rich & Strange is a nod to the classic tripels of old with the contemporary presentation of the best ingredients Alberta has to offer. An addition of honey from Gull Lake Honey adds a new dimension to this offering. Be careful with this one, it's deceptively drinkable at 10% ABV-sante!
Lager - Helles
A Canadian take on a German classic - this is a classic Munich Helles style lager brewed with a base of Pilsner and a little bit of Munich malt for colour and a touch of sweetness. Hop profile (flavour/aroma) is bright, crisp, fruity and subtle: red berries, white wine, citrus, and fresh cut grass. Malt profile is clean and classic with a hint of bread and biscuits. Clean, crisp, interesting, and easy-drinking Munich Helles style lager made in the modern AB Craft style.

Collab with Blind Enthusiasm. This hop-forward lager is a unique marriage of contemporary and old-world brewing techniques. Clean, crisp, and decisively bitter, this unconventional lager combines the timeless flavour of German Pilsner malt with hints of passion fruit, apricot, berries, and peach delivered through a generous dry-hopping of Callista.

In Collaboration with Cabin Brewing - Frozen Fresh Hopped IPA. Aromas of nectarine and honeysuckle lead into pineapple and cantaloupe, followed by just-assertive-enough bitterness and a subtle off-dry finish. Pillowy mouthfeel and clean supporting malt character combine to provide a well-balanced structure for this unique expression of hops.
Non-Alcoholic - Pale Ale
Want to join in on the party without getting sauced? This one's for you. Bright, clean citrus notes with soft peach, passionfruit and ripe orange flavours. Medium-bodied with a crisp and hoppy finish. The only thing missing from each sip is the booze.

Kölsch
Originally brewed as a cream ale, Scona Gold took a hiatus from our line-up before being re-introduced in 2014 as a traditionally brewed Kölsch style ale. Kölsch is a German style, which is sometimes referred to as the lager of ales and our Scona Gold is no exception! Voted Canada’s best craft beer of the year in 2015, Scona Gold Kölsch is a delightfully crisp and refreshing beer. This golden ale is sure to please; even the most die-hard lager drinkers will enjoy this treasure. Go for the gold, a Scona Gold.

Dimensions collide with two styles becoming one, New England IPA and Kettle Sour blend into a potent mix of sour, sweet and juicy. Some say we went too far, I say there’s no such thing! The first dimension was a super sour base with Mosaic. The second dimension was from out east, the New England haze bomb with a monsterous dry hop of Citra, Mosaic and El Dorado. Passion Fruit and Mango start up front like a punch in the nose, sour in the middle and then a juicy finish.

What happens when you have time too much time on your hands driving home from Calgary in the winter? You come up with beers like White Wedding! Combining two “out there” styles the White Stout and the Pastry Stout while throwing an entire wedding cake into the Mash. It may look light but the flavours of this are straight out of a roasty stout with residual sugars. Coffee, Chocolate, Icing Sugar are all the flavours in this unlikely collision of two worlds.
